In some instances like this where Pipelines either isn't flexible enough to use the criteria I need or there's an apparent bug, I generally will create a separate Checkbox Formula field where I build my trigger criteria. Then, in Pipelines, I just need to set my trigger to be when a record is Modified and my Checkbox Formula equals True/Yes.

Date Entry. In fact, I even tried the hard coding where you can select "If [Date Field] = Jan 1, 2020" (QB lets you select a date from a calendar). Still didnt work.

Is the date field you're trying to trigger from a data-entry field or a formula field?

Does anyone else have trouble using dates in pipelines? I believe a date change will not trigger a pipeline. I assume this must be a bug and am submitting it, but am wondering if anyone else is able to use a date as a trigger?
Also, as previously posted, using the 'in between' condition is also not functioning (as far as my testing goes). Just hoping to sort out if it's truly a bug or operator error.
