I can't see an option to do this, but I would like to send an email from an email account that is held in a field in the record to which the notification is attached. Is this possible?

No, the FROM cannot just be any random userid.  But it can be "FROM" any user who has access to the app.

Thanks. By that do you mean that I can send the notification from a user in the app (which I can see how to do at notification level) but that I can't indicate that I want to send an instance of the notification from a specific user (whose user account I'll have in a 'sender' field).

Ah, I think I've found a sort of work around. As I'm only likely to have a small number of users saving records, I could set up a notification for each of those users, to be sent from their email address, and trigger them selectively.

Oh, I am pretty sure that you can configure a notification to come from the user in a particular field. When you first posted your question I thought you wanted the email to come from just any old email address but not actually a user.
