Can you include more information for each user information like phone number and address?

I have tables that have records attached to 1-5 employees (users). I want to be able to input each employee's address, email, and phone number once, and then autopopulate this information every time that user is selected in one of my tables.

You will need to have a table of employees along with all these fields you need.  The Key field can be set to the user field.

Then make a relationship back to the details table based on your existing User field and do lookup down to the detail records for any of the std employee information fields.
