How can I use a contain formula - that also excludes a value please?

So I have a formula

If(  
Contains([Company | Name], "Microsoft") or
Contains([Company | Name], "Google"),"Software",

Contains([Company | Name], "Apple") or
Contains([Company | Name], "Samsung") ,"Hardware")

But I also want to exclude certain words e.g. so Apple Pay doesn't come up under Hardware I'd like to exclude 'pay'

Can anyone help please?

try this

If(  
Contains([Company | Name], "Microsoft") or
Contains([Company | Name], "Google"),"Software",

not Contains([Company | Name], "Pay")


and


(Contains([Company | Name], "Apple") or

Contains([Company | Name], "Samsung") ,"Hardware"))

This works for this example I've provided BUT my real world example has many more conditions - so I really wanted to have a list of exclusions and a list of inclusions; is that possible please?
