I have a numeric field called Approval Sequence.  This field needs to display as a three digit number.  If the number is 1, it needs to display as 001.  If it is 12, it needs to display as 012.  If it is 245, it needs to display as 245.

How can I achieve this?

No problem.  Make a new formula text field with the formula

Right("000" & totext([Approval Sequence]),3)

Mark - thank you SO much.  I asked a related follow up question to this one related to the same Approval Sequence field.  You always give such great answers and my follow up is a much tougher one.  Any help that you can provide on this other one would be greatly appreciated!
