I'd like to set a [Due Date] field to 48 hours from Now() when I create a ticket. But, I need to be able to edit that field if necessary? Any help appreciated?

A suggestion is to have a formula date-time field of [NOW +48 hours] with a formula of 

now() + hours(48)

Then a form rule to say

When [Due Date] is (blank) 

change [Due Date] to the value in the field [NOW +48 hours]
