I have created several lookup fields, but wasn't aware of the snapshot function. This would be very beneficial to our change requests

A snap shot field is a separate field from the actual lookup field http://www.quickbase.com/user-assistance/Default.html#setting_up_snapshot_fields.html

You do the normal lookup field (which you have) and then set up a regular field of the same type as the lookup, say for example "Text".  At the bottom of any regular field which is not a formula or a lookup field there is an option to turn it into a snapshot of another lookup field of the same type. Choose which field and you will be given the option to initialize all existing data, or not.

So, to answer your question more succinctly, the answer is "Yes, and indeed, that is the only way to set up a snapshot field".
