With these field types you can add values and then select them from a dropdown.

Just to add to the previous response, in addition to the down and dirty drop down lists for say a Status field where you just have a few choices built right into the field itself (say Open, In process, Closed), you can also have drop down lists which drive off tables, such as a drop down list of Customers.  There is also native ability to have "conditional drop downs", which means that once you select say a value for a region field, you only see a drop down list in the next field for Customers in that Region.

So, QuickBase is great at drop down lists.
