Here is my example:

If a record is created today then the next available date  in the date field is 2 days from the date the record was created

If you are looking for a formula field, then the formula for a formula-date field type would be

ToDate([Date Created]) + Days(2)

If you wanted to add 2 business days (ie skip wekeends), then the formula, would be

WeekdayAdd(ToDate([Date Created]),2)

No I am not looking for a formula field,  the user will use a date field to pick a date but I need to black out the date the record was created and black out the next two dates. So when they click on the date field they can only schedule two days from the record creation date

Let me offer a suggestion as what you are asking for cannot be done natively.  You can have that formula calculate the date 2 days out and then have a form rule blank out the date if it not valid.   If you actually want to modify the calendar date picker, than that is non native and I cannot help you and you will need to re-post your question.
