My suggestion would be to do the imports using a Connected Sync table. Then you could look back on the file path of where the files are uploaded and you would have the history there.

The fields which are connected are read only. But you can also have formula fields and manual fields.
You can also set up a scheme where data is imported to a connected table and then copied to an editable table. Then all fields would be editable.
A process could be set up to only copy new records to the editable table so that the edits don't get overwritten back to their original values
