Conditional Dropdown List Format Question

Hello!

I'm wrapping up a project but a formatting issue is irking me.

I've created a conditional drop down setup with two fields. Category and Sub Category. I've built necessary relationships and everything is working. 

HOWEVER...
In the list when I review my Categories to select from, its showing Category #1 - Name, Category #2 - Name etc. Its also doing the same for my Sub Category field. 

I've searched high and low on how to JUST have the name of the category/sub category without the prefix

Any advice?

    The low tech solution is to go to the Settings for the table which has the drop down choices and Advanced Settings and choose appropriate "Record Picker fields", ie fields which help users pick records.
