How can I lock a Record?

Hello, 
In this instance I have expenses that once they are assigned to an invoice,  I would like them to be locked or no longer edited except by an admin. How can I do that?

This can easily be done with Role Permissions. Go to one of those lower level Roles and then then set a "Custom Rule" for Editing such was

where [Invoice #] is (blank)
