      Try this

      var text FieldOneTwo =
      IF(Trim([Field1]) <> "", [Field 1],[Field 2]);

      IF(Trim($FieldOneTwo) <> "", $FieldOneTwo, [Field 3])

      The Trim is done just in case the data in the field was typed as spaces.
