User defined variable [quote]

Want to verify this is done correctly before submitting a Support Case. 

We have a User Defined Variable named Quote.
We use this in a formula field to parse out " quotes as not allowed characters.

The Formula no longer recognizes the variable.
I tried $quote and

I see "the variable $quote is not declared" and "field

is not identified", respectively.
