Using an old value when a pipeline is triggered

I saw this solution somewhere but don't remember. How do I use an old value of a field in the record that is triggering a pipeline? I want to put the old value in a new field sort of the way a snap shot works but I am don't want to use a look up field as the source of the old data.

Here are my cheat notes on that
{{a.$prev.est_start_date}}

take the regular version and insert the $prev

 Let's say field 10 is a text field called Status, then the correct syntax in the trigger query would be:

{'{{a.$prev.status}}' .EX. 'Value'}

But then this thread says that you cannot use prev in a query expression.
