How do display every record selected on the dropdown without erasing the previous, basically I wanna select as many item from the drop down and have them display on the stock item.

I think you are trying to attach multiple items(material) to a products , maybe like a BOM , 

An item can have multiple BOM item attached (see screenshot) ,if this is the case ,what you want to be achieved with a parent to child relationship .
