Dynamic form rules - change to value - Not showing every field

Question

I am using the new form designer and am trying to set a date field when a check box is selected and then use that date as a time stamp for the action so that it isn't overwritten the next time someone looks at the record. The problem is that my date field is not in the list of fields available for the change value action.
I am able to create this rule correctly using the old form designer.
