Do you have the label turned on or turned off?  Have you verified that the formula-text field is generating a result by displaying it in a report?  Can you create a new form with just that one field on it to verify it is displaying properly in a form layout?  Have you checked the usage to see what Rules the formula-text field is being referenced in; perhaps you have conflicting rules which are not being recognized as conflicting.

Sometimes a formula field can become "corrupted" - hence trying to see if one worked and the other did not.  Sometimes rebuilding something is easier than troubleshooting it for days.
