Does that mean you had to create a mobile form and then designate it in the table? I was hoping the main form I created would display correctly without having to manage it separately.

No - if you leave it as the option for 'Use Full Site Form' and it will just default to your default form specified for desktop. Keep in mind that certain elements will look and behave differently in mobile given general usability - but for the most part new tables or apps will default the mobile experience to the default form and then you can override that when you're ready to focus on the mobile flow.
