Older App / New Table: Default Form Settings
Is there a setting I can change so that the automatically generated default form for a newly created table, in an older app, is the new style of form instead of legacy style?

Sorry to say, but the answer is no. The legacy form is always generated by default along with the new form, but you have to manually set the legacy form to be the one in use by your roles.
