How are you looking up the record in the other table to perform your action? Your Pipeline high level should look something like:
Step A: Trigger when record is updated and status changes
Step B: Lookup or search for record in other table
Step C: Update Step B or Loop through Search Results to update Step B
When you say you're not seeing the status options - does that mean that it's not available as a field when you're picking the fields to include or is it there and the options aren't showing? The search records is fine as long as you're also using the loop and querying properly.
If you intend to update Status in your loop then you need to include the Status field that you intend to update in the search step where you have the fields to include. Right now you just show the address, so add status in there and it will appear as a field you can update if that field is actually editable in the table.
