Record Owner for Automation

I have 2 apps:  OurCompany, Customer.  I would like to allow Customers to enter notes in Customer and create the note in the corresponding OurCompany Table.  My goal is to show the original Record own...

The Record Owner will always be the Owner of the Automation. But you are free to create a new field such as [Record Entered by] and populate it with the current user. You can have a field on the Customer Table called [Current User] with a formula of User().

it appears in your use case that your Customers are Users.
