That sounds like a good option as well.
With that said, since the data entry part is on a form, would it make sense to create a second field (Formula - rich text) that takes the original text field, displays it in table view where it still allows me to add markup to field 2? For instance, field 1 shows on the form as a text multi-line field where users can enter data. Field 2 has a formula field that takes field 1's data, adds markup and some JavaScript and displays all records in table view, but only field 2 shows on the table with the formula rendered data?
