Table to Table Import

Just want to check before going too far down this rabbit hole that what I want to accomplish is actually possible.  I want to create an automation that will import selected records from one table into a backup table.  Additionally, I don't want/need to include any of the formula or lookup fields.  I briefly looked at the import automation, it would let me select a destination table, but not a source table.  Then I actually read the text below the run table import and noticed that it said run table to table import that I have previously created.  Where do I create the table to table import? And will this approach work?  The goal of this is to create a backup of the new/updated records.
