You can do this if editing a single record on a form using Dynamic Form Rules. But are you asking if this can be enforced in Grid Edit mode?

- Yes, I've tried the dynamic form rules but i'm trying to apply it in the Grid edit mode.
I've also added the form under Grid edit (full site) to the "Set how different roles use these forms" but unfortunately this doesn't work either..

------------------------------Dynamic form rules are called dynamic form rules because they only work on forms.
So there is not a way to have it work how are you want it to without the use of some kind of pipeline.
