Qrew LegendSummary reports do not support color coding unless you want to try to get fancy and make a Rich Text field to summarize on.

Ah, I finally found the thread I needed at the start.
Summary Report and Color Coding or Rich Text Formula Field
None of the fields in my table are recognized when I use the code in the link above, so I put in a support ticket. If I get it working, I'll update this thread with where I got stuck and how to resolve.
