If you set the Notification to only fire when a single record is changed (that is a setting near the bottom), then you have a lot of flexibility for the FROM. For example it can come from [Last Modified by] or any user field.

- Well it's tricky because the option to send FROM a user only makes sense if it is a single record notification else if you did a grid edit on 500 records all with a different user field values, then it would need to send 500 different emails. So the option only reveals itself when you confine the Notification to a single record changing.
