I personally prefer to have numeric fields for the units in minutes
For a numeric field type you can create a new formula numeric of
ToNumber(Left([multiple choice text], " "))
If you want to have a formula duration field type then it would be
Minutes(ToNumber(Left([multiple choice text], " ")))
