Email Notification - only show what changed from multiple fields

I want to set up an email notification that triggers when any of a certain number of fields are changed. However, i only want the email to show the fields that were changed not all the fields. Is this...

I have not tried this yet, but I would think you could create a changed fields table and use an automation to only copy fields that have changed. Then you could set up a notification in the changed fields table and only the changed fields would be available to populate the notification using a conditional statement to not show fields that are blank.
