Formula to create a date for a prior year using variable

I have a field [COI Issuance Date] that spans multiple years. I'm trying to write a formula that will tell me the anniversary date of that field for 2020, and another for 2021. I have the field for 20...

Squeeze in the -1

var date COI = [COI Certification Date];
Date(Year(Today())-1,Month($COI),Day($COI))
