Hi Bethany,
One option is to create a copy of the Admin role and make that the role you put your App Owner into and then in the standard Admin role you could hide those tables they don't need to see. That will at least remove it from their day to day view, though as admins they are going to be able to go in and update their own permissions to show that table should they need to in the future to troubleshoot. App Owner is a trait one of the users in the app takes on but is separate from the permissions in the app that control viewing tables, records, etc so it takes the extra steps.
