Make field data permanent

This is super helpful but it would not be in a form. We would want the field to auto populate once the criteria is met.

- We are a mortgage lender so we want to track where a loan is throughout the life of the application process. For historical analysis, we want to say "ok, so loan ABC was marked as "Approved" in the "Current Status" field on 4/21/2022. It was marked "Funded" in the "Current Status" field on 5/21/2022. Therefore we know it took 1 month from being approved to funding."
As it stands now, we have no way of storing that historical data because it overwrites the "Current Status" field. We are looking for a way to log that current status field data so we can query off it.
