Multi-Select Text - Restrict Access to Selections

I have a multi-select text field in which employees select from a task list all the tasks they've worked on that day. I'd like to set it up so that each user can only view/select from the tasks that relate to their job.

Is this possible?

If that can't be done - one resolution I was thinking of is putting individual multi-select text fields for every user, (each one only accessible to it's user), and have their entries all copy over to a single multi select text field, where i'd view all the submissions. Not sure how to do that though.
