If you include the form in the email Notifications , the fields which changed will be highlighted in red.
The other option which is which is not that well known is that if you have a field name in an email it looks like this
[Equipment Status]
but you can also hand type or hand edit it to be
[old.Equipment Status]
But you cannot just have the Notification tell you which one changed, but at least you could scan an email to see which one changed and what the old value was before the change.
