Pipelines: creativing csv report

Pipeline "Buckets" has a great facility to define a table, add rows, and create a downloadable csv file. However, in the finished csv I want it to sort one of the columns (headers) called publication name A to Z. Where/how can that be done? is it in the define table step? or later?

Can this be done?
