You set "role access permissions" down at the field level. Table level is simply that, table-level permissions on RECORDS. If you only want a role to edit specific fields, customize the field properties and set the role access permissions there.

That still didn't work. I've edited the permissions at both the table access level and the field access level. Both are set to view all records and not be able to modify anything, but they are still somehow editing records.
