Statistics with Charts

In a summary chart over time we want to be able to find or 'flag' days that show an increased change in 'Encounters', up or down. Example if on a normal business day, say a Monday there are 75 encounters but then next Monday only 40, that's a decrease by 47%. The Encounter App lists various locations and the number of encounters that happen from Monday through Friday and 900 for all locations is the goal line, with about half (450) on Friday's as some of the clinics are only open a partial part of the day. 

I have been looking for a good tutorial or three on this as I have ideas, but sometimes it helps to see some similar examples.
