Triggering Note Field Update with Pipeline

Hello:

Just starting to use Pipelines.  On my initial effort, I would like to trigger a text - multi-line entry based on a [Status Field] change.

Example:  If [Status] changes from "Hold" to "In Progress" make entry in [Installation Notes] = User "Updated Status to In Progress."

I know this is simple, but I am just getting going.
