If When you build notification so you will see that there are two tabs. One is the set up for the single record notification and the other is the set up for the multi record notification. I believe that in Grid Edit the updates are considered a multi record notification even if only one record is modified. I can't be 100% sure of that but certainly if even if two records were changed that would be a multi record notification.
So the first thing to check would be whether or not your notification is sent to fire on single or multi or both type of notifications.
There are some limitations on the multi-record notification, specifically because a single notification will fire with a link to all changed records then obviously it cannot list the individual information from each record.
So when you build the multi record notification you need to include the special marker which will provide the user with a link to all the changed records. But it will not tell the recipient what changed, only that something changed on the records in that link.
