If you are looking to be able to adjust a fields permissions across all the roles that can access it without having to open each roles permissions this is possible. You can do this in the fields properties. You would open up the field properties and under Advanced there is a checkbox for permissions. If you check the checkbox it will open up a list of your roles and their current permissions. Updating each roles permissions on the field also updates the role itself as they are connected.
This way you can change the settings for a specific field without having to go into each role. I hope this suggestion is helpful.
