2 part question - 1. Formula Help and 2. another easy question

1. Okay, I have a table and there is a UserList field of users that need to approve this record.  I used the approval workflow from the Magic Buttons app.  I would like to add a field that displays users that Have NOT yet approved the record.

Any ideas?  Is it possible?  

If it helps, I also have an activity log that logs the approvals.

2. What is the best way to "lock" a field or group of fields to where only the creator of the record can edit?
