Your plan will have some limits on the total # of apps and he total storage space, but sure. Just go into the Settings for the App and look for App management and copy the app. Do not copy Users in Roles or else your real users may accidentally end up in the COPY app. I suggest that you include the date in the name of the "Copy of xyz app Dec 1, 2020".
You might also change the branding header or put something gaudy on the dashboard of the copy app so even you don't get confused about which app you are in, live or backup.

------------------------------- MarkShnier__YouQrew LegendYou cannot update the old one. You just make a new copy and then you can decide how many older copies you want to keep and then deleting the older ones.
