I have a multi-select text field with 7 possible choices, is there any way to limit the users to only picking 3?

i think that you may need to offer three separate fields and then combine the results into one calculated field which eliminates any duplicate selections.

It is possible with script and easy to do. This example will prevent you from selecting more than two Multi Select Options:
